I got to looking online for pictures of different printer models, just
to see if there was anything I wasn't familiar with by way of paper
paths/trays/etc. Basically, it seems as I thought.

But looking at some models got me thinking about whether it would it
might be worth using Postscript printers from the start, thereby
removing Ghostscript/CUPS from the toolchain. The filled in PS
template could be copied directly to /dev/lp0 or /dev/usb without any
extra processing. A little faster, but especially one less software
failure point. If we wanted to do this, I think it pretty much limits
us to lasers; I don't know of PS-ready inkjets (but they might be out
there).
