It turns out that there is no evidence that Einstein said this or
any of the other popular variants, such as, "Everything should
be made as simple as possible, but no simpler." It appears to be
extrapolated from his choice of the most elegant and simplest
equation for expressing General Relativity, and from other
things he said about that choice, such as his opinion that
adding in a Cosmological Constant (to make the equation give a
Steady-State model of the universe) was the greatest blunder of
his life.
